Apple and Oat Dog Biscuits

Fall in a biscuit. Grated apple, oat flour, and a whisper of cinnamon, baked crisp. The core and seeds stay out, because that part of the apple is not for dogs.

Ingredients

  • 1 apple, grated, with the core and every seed removed
  • 2 cups oat flour, plus a little for rolling
  • 1 egg
  • 1/2 teaspoon ground cinnamon

Method

  1. Heat the oven to 350°F and line a baking sheet with parchment.
  2. Grate the apple on the coarse side of a box grater, stopping well before the core. Check the pile with your fingers for any seed that slipped through and take it out.
  3. Mix the grated apple and its juice with the egg, then stir in the oat flour and cinnamon until a dough forms.
  4. Roll to about a quarter inch thick and cut into shapes.
  5. Bake for 24 to 28 minutes until crisp and dry. Cool on a rack, where they crisp a little more.

Apple season produces more apples than any household can eat, and this is where the extras should go. Grated apple keeps the dough moist without a drop of oil, and cinnamon makes the kitchen smell like a pie shop while the biscuits bake.

The one serious step in the recipe is the grating. Apple seeds carry a cyanide compound in small amounts, and the rule on this site is absolute: flesh goes in, core and seeds go in the compost, and the grated pile gets a fingertip check before anything else joins it.
